Small Skewers Of Pork - {Souvlaki}

Recipe Ingredients

  Wooden skewers - (8" long)
2 lbs 908g / 32ozBoneless pork shoulder - cut 1 1/2" cubes
1/2 cup 118mlLemon juice
2 tablespoons 30mlRed wine vinegar
2 tablespoons 30mlChopped fresh oregano
1 tablespoon 15mlChopped fresh thyme
2 tablespoons 30mlChopped garlic
3 tablespoons 45mlOlive oil
  Salt - to taste
  Freshly-ground black pepper - to taste
6   Pitas
  Shredded Salad
3 cups 120g / 4.2ozShredded green leaf lettuce
1 cup 62g / 2.2ozWhite onion - cut thin half-moons (small)
3 cups 187g / 6.6ozRound tomatoes - medium diced (large)
1/2 cup 118mlOlive oil
3 tablespoons 45mlRed wine vinegar
1 teaspoon 5mlDried oregano
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Soak skewers in water for at least 1 hour.

In a bowl, toss together pork, lemon juice, red wine vinegar, oregano, thyme, garlic, olive oil, salt and pepper. Cover and refrigerate for 3 hours or overnight.

On the 8-inch skewers place 5 pieces of meat. Lay on a hot grill and grill slowly (no flame) continuing to brush on marinade, until meat is done. Serve immediately in a pita, topped with shredded salad.

Shredded Salad: Toss all the ingredients in a large bowl, taste and adjust seasonings.

This recipe yields 6 servings.
